Winter soups

I just love when the weather gets cooler as it means I can start cooking soups again!


Last winter I bought a wonderful soup cookbook & I have been working my way through it.  I thought I would share with you a couple of my favourite ones so far.  They are quick & easy to make & are delicious!

Potato & Leek Soup
Ingredients

  • 4 leeks, sliced
  • 500gm potatoes, peeled & chopped
  • 1 onion, chopped
  • 6 cups chicken (or vegetable) stock
  • 1 cup cream

Method
  1. Melt some butter in a saucepan, add the leeks, potatoes & onion and cook over a low heat until the onion is transparent
  2. Add stock and simmer gently for around 20 mins or until potato is tender
  3. Blend the mixture with a stab mixer to the consistency desired
  4. Add cream, salt & pepper to taste & serve!

Last night when I made this soup I cooked up some bacon pieces & added to the soup after I blended it, it was scrumptious!!


Cream of Zucchini Soup
Ingredients

  • 1 onion, sliced
  • 2 cloves garlic (I just use crushed garlic from a jar)
  • 750gm zucchini, sliced thickly
  • 6 - 8 cups chicken (or vegetable) stock

Method

  1. Heat some oil in a large saucepan, saute onion & garlic until onion is soft
  2. Add zucchini & toss gently for 5 mins
  3. Add stock and simmer until zucchini is tender
  4. Blend the mixture with a stab mixer to the consistency desired
  5. Serve with a dollop of cream

Both of these soups are so easy to make & freeze well.  I love to have mine with some toasted rye bread.
